What was I thinking???

My morning started out as usual…

Green Monster

But instead of this in my coffee

6 grams of sugar per tbs

I used this…

0 grams of sugar per tbs and a drop or two

Switching up wasn’t that bad.  Actually I hardly noticed it.  I drink flavored coffee so I’m still getting flavor, and honestly using the flavored cream didn’t do too much for me since I only used a tbs in my coffee.

I did my 30 day shred workout and my couch to 5k run this morning, and after that had my midmorning snack.

Plain yogurt, 1/2 banana, and 1/4 cup glazed walnuts

So the other day I was at the grocery store and I was trying to be a little frugal.  I passed up the greek yogurt and just got regular plain yogurt.  What was I thinking???  The minute I was scooping the yogurt into my bowl I knew my decision was a fail.  I will spend the few extra dollars and get greek yogurt from now on.  I’m spoiled by my creamy greek yogurt.

For lunch.. I tried out a new product from Flat Out.

Artisan Flat Bread

I cut up some veggies…

I mixed in with some chicken and mustard.

I heated up Green Giant‘s vegetable medley in the microwave and lunch was served.  Quick and easy.

I’m one of those types who can’t just eat a sandwich.  I always have to have a side… fruit, veggies, salad, and yes maybe even chips.  I’ve been trying to stay away from the chips so figured that some veggies and potatoes would be a better choice.  Anyone else out there that feels incomplete with just a sandwich??

The rest of my snacks for the day are

cantaloupe, peanut butter chocolate chip hummus with pita chips, and a mousse temptation

Dinner is up in the air.  Well, my coworker is bringing in something she made and though it should make me nervous since I don’t know the calories in what she has made, I feel okay about it.  I know that I ate right and exercised today.  I did what I was supposed to do and I’m sure whatever she makes won’t be too bad for me.  I never pass up a meal I don’t have to make 🙂

Book reviews

While I was on vacation I read two books….

The Recipe Club

This book was a quick read.  It’s about two friends who grow up writing each other and sending each other recipes.  They have a sort of falling out and then find one another again where they proceed to email each other trying to work out there problems.  I love how this book includes recipes and plan on making some out of the book soon.

The other book I read was

I don’t even know how to explain the Hunger Games except to stay that it’s a little sad.  I can’t imagine having to go through what the kids in the book have to go through just to survive.  I was in Hawaii when I finished the first book and had to find a book store so I could get the next book in the trilogy.  I can’t wait to see how it all turns out.

I got caught up in both of the books and am glad that I saw The Hunger Games in a few of the blogs that I read.

I would definitely recommend both of these books.

Today is my last day off, but being that it’s the beginning of the week I feel like I need to get my rear end back on to some kind of schedule.  I’ve slacked the past week and a half… I slacked big time.

This morning I was determined to start the day off right.  Missing Hawaii I decided to make some Espresso Chocolate Chip Hula Girl pancakes.  I saw this package in Hawaii and knew I had to buy it…. now I’m wishing I had bought a few.  To go with my pancakes I drank Hawaiian Isles Kona Coffee Chocolate Caramel Truffle coffee.

That was the best breakfast.

I had a doctor’s appointment in the morning, so after I dropped Justine off at school I headed to my appointment.  After having breakfast at 6:30, I knew I would be hungry on my way home so I decided to pack some Peanut Butter Chocolate Chip Hummus and some pita chips.  It might not have been the best choice since I needed to eat and drive, but I managed it quite well.  I love the combination of the sweet hummus and the salty pita chips.

Hummus and Pita chips

For lunch I kept it simple with a salad.  I had a little romaine, tomatoes, onions, rice noodles, 3 oz chicken and 2 tbs Panera Asian Sesame dressing.

It’s back to tracking and measuring, and making sure I’m eating well which I totally need.

I think today is the first day that I haven’t had a drink or two or three…

But I did have one of my favorite non- alcoholic drinks….

A green monster… it was so good.  So good that I drank it before I could even take a picture of it.

I think being on the go has finally caught up to me today because it’s still light outside but I can hardly keep my eyes open.  I definitely needed a nonstressful dinner and decided to use some Trader Joe’s chicken sausage that I had in the freezer.

I cooked a box of macaroni and cheese and some frozen broccoli and dinner was served.

Quick and tasty dinner.. my favorite kind

I had to admit that sometimes, I just miss the taste of boxed macaroni and cheese.

You know all those times that I cried about not having a cupcake or froyo shop nearby… I’ve been lying to you.  I don’t know why I didn’t think of it, but Fredericksburg has it’s very own cupcake shop, Colonial Cupcakes.  This past Friday Justine was allowed to bring two friends to stay with her a night at the Marriott.  She loves hotels and especially ones with indoor pools.  It was such a nice day out that we ventured across the street to the cupcake shop.  All of the cupcakes looked terrific.  Red velvet, Irish, Maple Pancake, Smores…

I wish I had my camera that night, but forgot it in the rush out the door.  I got four cupcakes since they had a deal if you bought four. We were the last customers of the night and when we got back to our room our box was filled with cupcakes, probably one of each kind they had.  Needless to say I’ve been averaging about one cupcake a day since Friday.  They are so good.

Tonight it was the Maple Pancake with Maple Frosting…. yum!

Today was also my first day back to exercising…

I did the first day of the couch to 5k workout and finished that off with the 30 Day Shred.  I was just shy of my 500 calories burned, coming in at 495.  I’m just glad I broke the nonexercising streak.

I also drank 64 oz of water…. phew.  It feels like a long time since I drank a lot of water.  It feels good.

Even though having to face reality isn’t all that great, I am kind of glad to be back into a routine of things.  Life seems to be a little easier when there some kind of routing.

Hawaii Part 2

One of the things Justine and I were looking forward to the most was getting to have a dolphin encounter.

Petting the dolphin

Justine dancing with the dolphin

Sorry for the not so great pictures… my parents were on the opposite side of the pool taking pictures.

I also found my sea turtle.

The sea turtle had a pink K on it

We had such a good time at Sea Life Park.  We got to kiss and dance with the dolphin, feed the sea turtle, and see a wolphin.  Has anyone ever heard of the wolphin???  It’s a dolphin and whale.  The story I heard was that there was a dolphin and whale in the ocean and just happened to be feeling, oh… frisky that night.  And they had a wolphin!  I tried taking a picture of it, but that thing was super fast.

Justine had her celebrated her birthday in Hawaii and her only request was going to The Cheesecake factory for dinner.

The birthday girl

Everyone singing Happy Birthday to the birthday girl

Birthday Girl!

Of course I had to get a piece of cheesecake, too.  I got the Adam’s Reese’s Peanut Butter cheesecake.  It took me three days to eat it! It was so good.  We only go to the Cheesecake Factory once a year (when we’re in Hawaii) and I think that’s probably a good idea.  That place is dangerous!  Thankfully my family all had the same idea… we ordered a few appetizers to share so we had a little room for dessert.  The portions there are huge!

The next morning we got up bright and early to venture off to Hanauma Bay, and when I say bright and early I mean we got there to see the sun rise.

Hanauma Bay is one of the best places to go snorkeling and watch for whales.  We saw three out there that morning and they were pretty active.  Justine and I will go out together looking at all the fishes around.  It’s a state park and they take such great care of the place.

It was a great vacation… the weather was great… the food was great, but I ate way too much.  The drinks were good, but I had way too many of them.  I guess it was the usual kind of vacation.  It was just nice to be away from work, and home, and all the stresses that I seemed to leave when I stepped onto the plane.  Ugh… now it’s back to reality.

Hawaii Part I

Soooooo I’m back!!!!

Last Wednesday we were on a flight over to Hawaii!

Justine wasn't trying to take a good picture 🙂

I’m one of those paranoid types who didn’t want to say where I was going until I got back… just in case.

For those of you who don’t know my sister and her family live over in Hawaii, so we usually go over once a year.  This is actually Justin’se 7th time going.

One of the first things we did once we were over there was take a hike up a mountain to see a light house.  We went in the morning and it was a beautiful day.

The hike was 2 miles up

The best part of the hike was looking out into the ocean and seeing whales!  Lots of whales.  We were all screaming when we saw one.  I think it’s between Jan and April where whales are the most active and where you can see them the most in Hawaii.  They were so quick though I didn’t get any pictures of them 😦

The light house

It was pretty windy on the top of the mountain

It also rained for a few minutes while we were on the way up which lead to this…

For dinner that night we went to a luau which just happens to be at our hotel, and one of the best ones around.

One of the entertainers climbing up a coconut tree

A pig they dug up from the pit where it was cooking

Sorry….for all of you animal lovers out there!!!!!

The rest of the pictures are a little too dark to be posting, but they had great dancers.  The fire dancers were my absolute favorite!

That was our first full day on the island so we were in bed a little early only to be woken up to alarms sounding in the city and my phone ringing from friends back home calling about the Tsunami that they were warning Hawaii about.  It was pretty scary.  They would go over the intercom system in our hotel about the evacuation Waikiki was under.  We were thankfully on the 6th floor so we didn’t have to evacuate, but we did have to stay in our room.  It was wild not seeing anyone on the streets of Waikiki, only cop cars… fire trucks… and about a hundred boats out in the ocean.  Thankfully it wasn’t much more than a few strong waves.  What a night though!

That’s the first part of my Hawaiian vacation.  I missed the blog world… I’m trying to catch up on all my blog reading… my google reader is at 812.  Phew!  I can’t wait to see all that I missed.

Happy St Patrick’s Day!!!

Though I will not participating in drink green beer (that’s not by choice *sad face*) I will be partaking in another Irish tradition….

Irish Potatoes!!!

I live about 5 miles from a candy store… talk about torture!  I try not to go in there more than three times a year.  It’s very dangerous.

Last year was the first time I tried an Irish Potato… And I fell in love.

I’m not even sure what is in them.  I know there’s coconut.  I know there’s cinnamon.  I know it tastes good.

I ❤ Irish Potatoes!!!

Happy St Patty’s Day.

It has finally happened!

You guys will never believe what I saw the other day.  The closest “city” to me is Fredericksburg.  It’s about 30 minutes away.

I love this area really.  We have the historical side, and the side where it seems like something new is built everyday.  It’s the perfect medium.

I’ve commented on a lot of blogs how I wished I had a cupcake shop, or a froyo shop… and guess what!

The other day I was in Fredericksburg riding with my mom when I saw something in the corner of my eye.

Right underneath it I say Froyo…and I almost screamed!

We are finally getting a froyo shop, and I don’t even know if it’s open yet.

You better believe I will be stalking that place until I seem a We’re open sign.

Now if we could only get a Trader Joe’s…..
